Ingredients: 185 g basmati rice, rinsed and soaked 30 min; 2 tbsp neutral oil; 1 green chilli, slit; 1 tbsp raisins; 0.5 tsp ground ginger (or 1 tsp fresh grated); 1 tsp biryani spice mix (or garam masala + cardamom); 0.5 tsp ground turmeric; 0.75 tsp salt; 240 ml hot water; 180 ml whole milk

बिरयानी — perfumed with ginger, raisins and turmeric. Indian recipe on the hob or in the Instant Pot, with quantities that scale to your servings.

Ingredients

185 g basmati rice, rinsed and soaked 30 min

2 tbsp neutral oil

1 green chilli, slit

1 tbsp raisins

0.5 tsp ground ginger (or 1 tsp fresh grated)

1 tsp biryani spice mix (or garam masala + cardamom)

0.5 tsp ground turmeric

0.75 tsp salt

240 ml hot water

180 ml whole milk

Method

Warm the oil in a saucepan over medium heat. Add the chilli, raisins, ginger and biryani spice. Stir for 30 seconds - the raisins will plump.

Add the turmeric, salt, hot water and milk. Bring to a simmer.

Drain the soaked rice and tip it in. Stir once, then turn heat to lowest and cover tightly.

Cook for 18-20 minutes. Do not lift the lid.

Rest, covered, off the heat for 10 minutes. Fluff gently with a fork.
