Authentic Bosnian meat and cheese pastry with layers of filo dough. Bosnian recipe in the oven, with quantities that scale to your servings.

Ingredients

300 g minced beef

1 onion, finely chopped

250 g white cheese (burrata or similar)

200 g fresh filo pastry

1 egg, beaten

1 tbsp olive oil

1 tsp paprika

1 tsp black pepper

1 tsp salt

1 clove garlic, minced

Method

Prepare the filling: In a pan, sauté the chopped onion in olive oil until soft and golden. Add minced beef and cook until browned. Stir in garlic, paprika, salt, and pepper. Cook for another 5 minutes until the meat is cooked through. Remove from heat and allow to cool slightly.

Prepare the pastry: Roll out the filo pastry on a lightly floured surface. Brush with a little melted butter or oil and layer in a baking dish, making sure each sheet is well coated with fat.

Assemble the burek: Spread half of the meat filling evenly over the pastry base. Add cheese on top and then add the remaining meat filling. Fold the edges of the filo pastry over the filling and brush with beaten egg for a golden finish.

Bake: Preheat oven to 180°C (350°F). Bake for 45-50 minutes until the pastry is golden brown and crisp. Let it cool slightly before serving.

Serve: Cut into wedges and serve warm with a side salad or pickled vegetables.
