Döner — triple-sauce doner wrap. German recipe on the hob or in the air fryer, with quantities that scale to your servings.

250 g minced lamb (or lamb-beef mix)

1 tsp ground cumin

1 tsp paprika

0.5 tsp garlic powder

0.5 tsp onion powder

0.5 tsp dried oregano

0.25 tsp cayenne pepper

salt and black pepper

3 tbsp mayonnaise

1 garlic clove, crushed

0.5 tbsp lemon juice

3 tbsp Greek yoghurt

1 tsp dried dill (or fresh)

0.5 tbsp lemon juice

pinch of salt

2 tbsp sriracha or sweet chilli sauce

2 large flour tortillas

2 iceberg lettuce leaves, shredded

50 g red cabbage, finely sliced

1 tomato, sliced

0.5 cucumber, sliced

Method

Mix the minced lamb with all the spices, salt and pepper. Knead well for 2 minutes until the mixture is sticky and holds together.

Divide the meat into 2 portions. Press each portion flat (about 5mm thick) between cling film or on a board. Shape into ovals roughly the size of your tortilla.

Heat a large pan or griddle on high heat with a thin layer of oil. Cook the flattened meat for 3-4 minutes per side until dark and crispy. Slice into strips.

Mix the garlic sauce: mayo + crushed garlic + lemon juice.

Mix the yoghurt-herb sauce: Greek yoghurt + dill + lemon juice + salt.

Warm the tortillas in a dry pan for 30 seconds each side.

Build the wrap: lay tortilla flat, spread garlic sauce down the centre, add lettuce, red cabbage, tomato, cucumber. Pile the sliced meat on top. Drizzle yoghurt-herb sauce and chilli sauce over everything. Fold and roll tight.
