2 tbsp olive oil

1 large onion, finely sliced

1 green chilli, sliced

4 ripe tomatoes, chopped (or 1 tin)

240 ml roasted eggplant base (see baba ganoush)

1 tbsp tomato purée

0.5 tsp ground cumin

0.5 tsp ground turmeric

0.25 tsp curry powder

0.75 tsp salt

Method

Warm the oil in a wide pan. Add the onion and a pinch of salt and cook gently for 12-15 minutes until deeply golden and sweet.

Add the chilli and tomatoes. Cook for 8 minutes, breaking down with a spoon, until you have a thick sauce.

Stir in the eggplant base, tomato purée, cumin, turmeric, curry powder and salt.

Lower the heat as far as it goes, cover, and cook for 30 minutes, stirring once or twice. The stew should reduce and taste sweet, smoky and rich.
