Ingredients: 400 g fresh salmon fillet, skinless; 500 ml fish stock or water; 3 large potatoes, cubed; 1 large onion, diced; 2 carrots, sliced; 2 celery stalks, sliced; 1 tbsp butter; 2 tbsp all-purpose flour; 250 ml double cream; 1 tsp fresh dill, chopped; salt and pepper to taste

Finnish traditional salmon soup with potatoes and cream. Finnish recipe on the hob, with quantities that scale to your servings.

Ingredients

400 g fresh salmon fillet, skinless

500 ml fish stock or water

3 large potatoes, cubed

1 large onion, diced

2 carrots, sliced

2 celery stalks, sliced

1 tbsp butter

2 tbsp all-purpose flour

250 ml double cream

1 tsp fresh dill, chopped

salt and pepper to taste

Method

Prepare the soup base: Heat the fish stock or water in a large pot and add the cubed potatoes. Cook for 10 minutes until potatoes are soft.

Cook vegetables: Add diced onion, carrots and celery to the pot. Cook for another 5-7 minutes until vegetables soften.

Add salmon: Add salmon fillet to the pot and cook for 8-10 minutes until fish is cooked through.

Prepare salmon: Remove salmon from the pot and set aside. Flake the salmon into chunks.

Make roux: In a small pan, melt butter and stir in flour to make a roux.

Add cream: Gradually add cream to the roux, cooking for 2 minutes.

Combine ingredients: Return the cooked salmon to the soup along with the flaked salmon.

Finish the soup: Add the cream mixture to the soup. Season with salt and pepper.

Garnish: Garnish with fresh dill before serving.
