Ingredients

500 g cod fillets, skinned and flaked

700 g potatoes, peeled and cubed

1 large onion, diced

250 ml milk

250 ml whipping cream

40 g butter

30 g flour

salt and pepper to taste

1 tsp dried dill (optional)

Method

In a large pot, melt the butter and add the diced onions. Cook until softened and lightly browned.

Sprinkle in the flour and stir for about 1 minute to create a roux.

Gradually add milk and cream, stirring continuously to avoid lumps. Bring to a gentle simmer.

Add the cubed potatoes and season with salt and pepper. Cook until potatoes are tender (about 15-20 minutes).

Gently fold in the flaked cod, being careful not to break apart the fish.

Simmer for another 5-10 minutes until everything is heated through. Sprinkle with dill if using.
