Ingredients: 200 g white beans (kidney or cannellini), soaked overnight; 1 large onion, sliced; 1 red bell pepper, sliced; 2 chillies, sliced (optional); 3 cloves garlic, minced; 1 tsp ground cumin; 1 tsp smoked paprika; 1 tsp dried oregano or thyme; 1 tbsp tomato paste; 250 ml vegetable or beef stock; salt and freshly ground black pepper to taste; 3 tbsp olive oil

Authentic North Macedonia tavče gravče with white beans, onion, paprika and chilli - both traditional hob method and pressure cooker version

Ingredients

200 g white beans (kidney or cannellini), soaked overnight

1 large onion, sliced

1 red bell pepper, sliced

2 chillies, sliced (optional)

3 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1 tsp dried oregano or thyme

1 tbsp tomato paste

250 ml vegetable or beef stock

salt and freshly ground black pepper to taste

3 tbsp olive oil

Method

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the chopped onions and cook until they become translucent, about 5 minutes.

Add the garlic, chillies (if using), paprika, cumin, and oregano. Cook for another minute until fragrant.

Stir in tomato paste and cook for 1-2 minutes.

Add the soaked beans, stock and salt and pepper. Bring to a boil.

Reduce heat and simmer covered for 45-60 minutes or until beans are tender.

Stir in the red bell pepper and cook for an additional 10-15 minutes until tender.

Serve hot with traditional Macedonian accompaniments like ajvar, fresh bread or yogurt.
